Chow Chow


Hubby made his green tomato relish today. I did help. I am going to show his work and share his recipe. I did go to the grocery store and get what he needed.
It was last year he showed his interest in making a relish. He had looked it up on line then told me he was going to try making it himself.

First he cut up his green tomato's and then used my little electric chopper to chop them up fine.
While he did that I cleaned the green bell peppers and red pepper and onion, then chopped them up fine.

                                          All placed in a large pot..........
next two cups of sugar

2 cups of cider vinegar

1 tablespoon + 2 teaspoons yellow mustard seed
1 tablespoon celery seed
1 tablespoon + 2 teaspoons of kosher salt 
we just used Morton salt 
Hubby only used 2 green bell peppers
22 smaller tomato's
1 large onion
Morton salt
We didn't do a water bath instead, we put our jars in boiling water for a few minutes to sterile and also placed the lids in boiling water put hot relish in hot jars and put the lids on and they sealed in no time. This is my way of canning.
We didn't have to skim off anything.

Green Tomato Relish aka Chow Chow

12 large green Tomatoes (cored)
(I used about 20 small to med size)
4 - green bell peppers, seeded
4 - medium yellow onions (I used one very large one)
1 - red bell pepper, seeded
1 - tablespoon + 2 teaspoons yellow mustard seed
1 - tablespoon celery seed
2 - cups cider vinegar
2 - cups granulated sugar
1 tablespoon + 2 teaspoons kosher salt

Chop the tomatoes and peppers very finely. Either by hand or in small batches in a food processor. I diced up all my veggies only because I like a chunkier relish. Put the chopped vegetables in a large pot (heavy bottom non reactive pot) add the mustard seed, celery seed, vinegar, kosher salt and sugar. Stir well and bring to a simmer over medium heat. Cook stirring often and skimming as needed. ( I did not have to skim off anything) Simmer until the relish/chow chow cooks down and thickens into a relish, about 2 hours. Turn into hot sterilized jars and process in a hot water bath.

I have done a feijoa chutney once but haven't tried chow chow. I might have to give it a go.

I'm going to be doing some pepper relish pretty soon. I keep freezing the peppers as I get them and as soon as I have enough I'll be chopping and chopping and chopping LOL. There are so many relish recipes. Love them all. Really good on hot dogs and in egg salad.
